Where to stay in Las Terrenas or Las Galeras ?

Does anyone have suggestions on a quiet all inclusive (or even non all inclusive) in either Las Terrenas or Las Galeras ? I've stayed at the Viva Wyndham in Terrenas but its closed for reno's and now I'm trying to find something similar. I loved the "off the beaten path" location of Wyndham. Or... has anyone ever stayed at Bahia Estela? Its next to the Wyndham resort ? Thanks so much ! ps. how bout Grande Paradise in Las Galeras ?
